My husband loves making pancakes and my kids love eating them. So, this morning, we decided to combine pancakes with our Muffin Tin Monday meal!
First we made mini whole wheat pumpkin pancakes. We started with the pancake recipe in Betty Crocker's New Cookbookand swapped out the white flour for whole wheat. Then we added 1/2 cup of pumpkin.
Since our regular muffin tins were occupied making pumpkin muffins for my son's Thanksgiving feast, I decided to break out my new winter muffin tins (From Target "Dollar" section (for $2.50) a little early.
We used the muffin tins for a variety of pancake toppings: chopped walnuts, coconut whipped cream (with honey instead of Agave- also kind of watery because I forgot to chill the coconut milk... ooops), dark chocolate shavings, raisins, blackberries and shredded frozen banana.
The kids had an awesome reaction to this breakfast!!
My daughter said, "Mom, when you make food fun, it tastes gooder." The sentiment was perfect even if the grammar wasn't :)
My daughter decided that she should make the pancakes into snowmen (wish I thought of this!)

ReplyDeleteYummy muffin tin, love all the toppings. And the snowman is adorable. We have pancakes at least 2 times a month for our Breakfast for Dinner Thursday meal. I try to not have it every week, though the kids would love it. We have them with apples in them, or peanut butter or plain or mini chocolate chips, etc. Think we need to try pumpkin ones.
