This is the week of the Sweet Potato!! I pinned a recipe for Sweet Potato Chili and it had 20 repins within a few hours. I haven't tried it yet, but it obviously sounded good to more people than just me!! In honor of that, I'm going to buy a bunch of sweet potatoes and use them in a variety of ways this week!
Dinner:
Monday- Rigatoni Bake (Spaghetti Squash Bake for me)
Tuesday- Herb Crusted Chicken (boxed kit I want to use up) Baked Sweet Potatoes and Broccoli
Wednesday- 13 Bean Soup with Smoked Sausage (using bulk bag bean "kit") double and freeze
Thursday- Chicken Paprikash with whole wheat egg noodles
Friday- Green Pepper Soup (I add a chopped onion (cook with meat) use only 1- 1/2 lb meat and either use beef broth or increase the ratio of bullion to water - double and freeze
Saturday- Black Bean and Sweet Potato Tacos
Sunday- Spaghetti with Asparagus and Egg (
Lunch Options: (all served with fruit and or veggies)
Grilled Cheese
Turkey and Cheese Sandwiches
Pizza on Sandwich Thins
Egg Salad Sandwiches
Sweet Potato Chili
Leftovers
Breakfast:
Monday (Smoothies)- Blueberry, banana smoothies with toast and sausage
Tuesday (Eggs)- Stovetop and Eggs (I got this idea from one of my friend's in college) Make stovetop stuffing and make scrambled eggs. When eggs are partially finished, but still a little "sticky" add stovetop and mix together.) I have some whole wheat stovetop in the pantry and decided to do this to use it up!
Wednesday (Sandwiches)- Avocado Egg Salad Sandwiches
Thursday (Oatmeal)- Oatmeal with fruit mix-ins
Friday (Yogurt)- Yogurt with pineapple and toast with cashew butter
Saturday (Pancakes)- Sweet Potato Pancakes
Sunday (Muffins)- Zucchini Pumpkin Muffins (* I'm combining my zucchini muffin recipe with my pumpkin muffin recipe... I'll let you know how it goes!) Turkey Bacon

I would never have thought to put Stovetop and eggs together, but it actually sounds good. My youngest loves Stovetop, but it's not something we normally make so that gives me an excuse.

When I was in college, I stayed at a friend's house and it was what her mom made for breakfast... it was then a college staple for a while, but I haven't made it in a long time! I found a box of Stovetop in the pantry and wanted to use it and the idea "came back to me!"
