Solving Problems with Playdate Muffin Tins

13 November 2011

On Veterans day, I ended up with three extra kids for lunch (making a total of 6.)  As lunch time approached, I realized that I had no idea what I was going to serve this group of kids who were not all as adventurous as my kiddos when it comes to food.

Macaroni and cheese is always a safe bet, but all I had was some left-over macaroni from when I made "scaffolded mac and cheese."  Pizza's usually a hit, but I just had one single serve frozen pizza in the freezer.  It seems that all kids like peanut butter and jelly, but I'm allergic to peanuts (so it's cashew butter in my house) and I only had whole wheat bread and I wasn't sure if that would have universal appeal.

I decided to use 3 shared Muffin Tin Meals to solve my problem... First of all, I figured that the novelty of being served in a muffin tin would help increase the appeal.  Secondly, this way I could serve a variety of foods in a less threatening way, and hopefully there would be at least something that would please everyone in the crowd.

Problem Solved!

  2. JDaniel4's Mom... I figured you might:) Lisa, they were! (And one of the girls who is particularly picky cleared her tin! Her's didn't have the tomatoes or beans shown in the front tin, but she didn't say a word about the multi-colored noodles or whole wheat bread. She even asked for another sandwich!!)

  4. Yay! I have really found that bentos and muffin tins help me use up some of the leftovers (like those you mentioned) that otherwise wouldn't get eaten.
