We spent the weekend with my parents and left with some bacon and a rotisserie chicken, so I'll be trying to incorporate those, as well.
Dinner
Monday- Aussie Chicken (*made without the corn syrup, and I only use about 1/4 of the sauce overall because I only spread a light coating on the chicken and don't serve any on the side), Whole wheat Israili cous cous, kale chips
Tuesday- Chicken and Bean Enchiladas (using the green enchilada sauce I found in the pantry)
Wednesday- Tuna Noodle Casserole (no pimento or bread crumbs- using whole wheat egg noodles and Homemade Cream of Mushroom soup (*From last week's menu but I didn't end up making it)
Thursday- Ham and Bean Soup (using the bag of dried bean soup I found in the pantry and the leftover ham in the freezer)
Friday- Taco Pork Chops, mexican rice, parboiled carrots with salt and pepper
Saturday- Make your own pizzas.
Sunday- Leftovers or chicken corn soup from the freezer
Breakfast
I'm also planning my breakfasts this week and trying out having a "theme" (and idea I got from this post on Mommy Minded) for each day of the week to hopefully make "no cereal" breakfast planning easier. I also try to incorporate whole grains, protein, and low sugar in each breakfast because I have found that this makes for a peaceful morning and a more well-balanced day!
Smoothie Monday- Blueberry Smoothies made with frozen wild blueberries, bananas, plain Greek yogurt, milk and chia seeds and a cinnamon/ sugar (coconut sugar) toast
Eggs Tuesday- "Grammy Style" Eggs- scrambled eggs with laughing cow cheese and Penzey's Fox Point Seasoning , with whole wheat toast and fruit
Sandwich Wednesday- "Beanie Pizzas" Sandwich thins with refried beans, avacado, and cheese.
Oatmeal Thursday- Whole New Mom's Baked Oatmeal, turkey bacon
Yogurt Friday- Ciobani Plain Greek yogurt with fruit and cashew butter toast
Pancake Saturday- Apple Ring Pancakes with turkey bacon
Muffin Sunday- Orange Strawberry Muffins made with whole wheat flour, served with Greek Yogurt
